Honey & Berry French Toast (Ruchers de l'Est Edition)

In a dry pan, toast the almonds over medium heat for 2 to 3 minutes until golden.
Add the honey and stir to coat the almonds. Let bubble for 2 to 3 minutes until sticky and caramelised.
Spread on parchment paper, sprinkle with salt and let cool completely.
Once hardened, break into pieces or crush for sprinkling.
Melt the butter over medium heat.
Add the berries and cook for 4 to 5 minutes until tender.
Drizzle with honey and cook for another 2 minutes until everything is glossy and slightly syrupy. Remove from heat and keep warm.
In a shallow dish, whisk the eggs, milk, vanilla and cinnamon.
Dip each slice of bread in the mixture, soaking both sides well.
Heat a little butter in a pan over medium heat. Cook each slice for 2 to 3 minutes per side until golden and lightly crisp.
Place 2 slices of French toast per plate, top with the warm berries, sprinkle with almond praline and drizzle with Ruchers de l'Est vanilla-infused honey.
Add whipped cream or a scoop of vanilla ice cream, a few mint leaves and a light dusting of icing sugar.
The vanilla-infused honey adds a perfumed, refined sweetness that elevates the berries and gives a high-end brunch finish.
